Quick and easy but wicked DESSERT recipe

Use a standard pack of waffles and cut into squares with kitchen scissors.
You'll also need: 150 g white chocolate, 200g fresh raspberries, 55 g castor sugar, 1 tabsp plain flour, 500ml reduced fat creme fraiche, 3 eggs, 1 teaspoon vanilla essence or extract, 2 tabsp icing sugar- optional for serving only.

You can also use frozen summer berries but defrost for 3 minutes in microwave first.

Put the waffle pieces, fruit and chopped white chocolate in a Pyrex or similar oven-proof dish.


Mix creme fraiche with vanilla essence,castor sugar, flour and the eggs and beat well .
Pour over waffle, choc and fruit mixture and bake in oven for 25-30 minutes at 200 degrees C/ Fan 180 degrees or gas mark 6.  Remove when golden brown and set in the centre. Cool for 10 minutes and then serve sprinkled with sifted icing sugar and vanilla ice cream? YUMMY!
We had it without ice cream or icing sugar and it was eaten within minutes, ALL GONE.
And it was so easy and super quick!T'is a pud to do when you have unexpected guests, just make sure you have the ingredients in the larders....
Mind you it doesn't look so pretty in the bowl, so eat up with eyes closed. The tartness of the raspberries with a scoop of white chocolate goo is just divine. And the waffles go partly toasted and crunchy and partly soft and mushy.
